Kopytka – Polish Potato Dumplings

INGREDIENTS

1½ kg large potatoes (peeled, cooked and mashed before and stored in the fridge)
3½ cups plain flour +some more for working surface
3 large eggs
salt

EQUIPMENT

large flat pot
slotted spoon

METHOD

Bring giant pot of water to boil.
Mix potatoes with flour and eggs, season with salt.
Knead dough quick on floured surface, don't let it to induce heat as a result of it'll flip soft and sticky.
Create two cm wide rolls, flatten them along with your hand and chop with the knife.
Place a number of them (only the maximum amount as will work on very cheap of the pot) in pot of boiling water, cook for three – four minutes from the time they begin floating on the surface.
Remove kopytka from the pot mistreatment slotted spoon and place another portion within the pot.
When all kopytka area unit grilled share to the plates and high along with your favorite topping. Optionally refry before sharing to the plates.
