200 g cottage cheese
2 eggs
a small pinch of salt
1 tbsp sugar
1 teaspoon vanilla sugar
1/2 cup flour
1/2 cup of milk
2 tablespoons of butter
powdered sugar
optional: 2 tablespoons of soaked raisins
to serve: e.g. strawberry jam, fresh fruit

PREPARATION

Put the cottage cheese in a bowl and crush it with a potato pound. Add egg yolks (put down proteins), salt, sugar, vanilla sugar, flour and milk. Mix everything thoroughly with a rod. Finally add the drained raisins if you use them.
Proteins beat separately to stiff foam. Add it to the curd mass and mix gently with a spoon.
Heat the pan with butter. When the butter starts sizzling, clarify it (remove the foam). Spread the butter over the entire surface of the pan, pour the mass on the omelette, level the surface.
Fry on moderate heat for about 4 minutes or until the omelette is nicely browned from below. Then turn it over to the other side with a wide spatula - the omelette may break, because in the next step we tear it into smaller pieces anyway. Omelette pieces turn over and fry from other sides for a total of another 4 minutes.
Transfer to a plate, sprinkle with powdered sugar, serve with jam and fruit.
