CAKE
500 g wheat flour
3/4 cup (190 ml) milk
50 g fresh yeast
1 egg + 2 yolks (or 2 eggs)
1/2 cup (120 g) of sugar
70 g butter
FILLING
500 g cottage cheese
1 egg
1 vanilla sugar
80 g icing sugar
40 g butter
FROSTING
juice from 1/3 lemon
about 2/3 cup powdered sugar
AND
spreadable egg
PREPARATION
CAKE
Yeast, eggs and butter, remove from the fridge beforehand and warm to room temperature. Sift the flour into a large bowl. Heat the milk (it must be warm and lukewarm).
Make a yeast solution: crumbled yeast mix for a minute with a tablespoon of sugar, until the ingredients dissolve. Add 1/3 the amount of milk and 2 tablespoons of flour, mix thoroughly. Cover with a cloth and let stand for 15 minutes to rise.
Mix the egg and yolks with the rest of the milk. Combine with the rest of the flour, remaining sugar, yeast solution and soft butter.
The whole thoroughly knead for about 15 minutes, until the ingredients combine thoroughly and the dough will be smooth, flexible and will start to come off the walls of the bowl or hands if you knead it by hand.
Cover with a cloth and set aside in a warm place for about 60 minutes to rise.
FILLING
Put cottage cheese in a bowl, add egg, vanilla sugar, powdered sugar and soft butter. Mix for about 1 minute.
MOLDING AND BAKING
Place the sprinkled dough on a dust board with dusted flour and knead for a while to get rid of air bubbles. Divide into 4 parts and form a ball with each. Then roll them out into rectangles about 20 x 25 cm.
Spread 1/4 of the filling on each cake. Fold the dough halfway along the long side, cover with the other half of the dough (as seen in the pictures below). Cut each strip of dough into 6 pieces, screw them on and put them on 2 sheets lined with baking paper, keeping a space of approx. 3 cm.
Brush the top with a beaten egg and leave to rise for about 20 minutes in a warm place without drafts.
Insert the first baking tray into the oven preheated to 180 degrees C and bake for about 20 minutes until golden brown.
After baking and cooling, decorate with icing : heat the lemon juice, set aside from heat, add powdered sugar and mix.
